It’s gobble gobble time with easy and low cost side dishes.
In the spirit of Thanksgiving season, I have gathered two recipes that have deep meaning to me and can be made for relatively cheap.
Growing up, my family didn’t have a lot of money, so the ingredients are relatively simple.
These recipes are garlic mashed potatoes and green bean casserole.
CHEESY GARLIC MASHED POTATOES
Cooking time: 35 minutes.
Serves 6 to 7 people.
Ingredients:
Potatoes (3 pounds)
Cheddar cheese (8 ounces)
Garlic powder (3 teaspoons)
Green onions (6 stalks)
Butter (5 tablespoons)
Milk (1 cup)
Cream Cheese (5 tablespoons)
Optional:
Substitute cheese for one of your choice
Salt (2 teaspoons)
Additional seasoning (just a couple of pinches)
Peel potatoes under cold water, and place them in a large pot. Fill the pot with water, and let the potatoes simmer on medium heat for 30 minutes. While the potatoes are cooking, dice the onions, and place them in water after 20 minutes. Cover pot with lid for the remaining time.
After the potatoes are done cooking, drain excess water. Leave the potatoes in the pot, and add the remaining ingredients. With a large metal spoon, mash the potatoes, and mix all the ingredients together until the mixture is fluffy. Let cool for 5 minutes and then serve.
GREEN BEAN CASSEROLE
Cooking time: 15 minutes.
Serves 6 to 7 people.
Ingredients:
Green Bean, fresh cut (3 14.5 ounce cans)
Cream of chicken (3 cans)
Vegetable Oil (2 teaspoons)
Goya Adobo All-purpose seasoning (two dashes)
Cheddar cheese (6 ounces)
Crispy onions (7 ounces)
In a medium-sized saucepan, add oil and put all the green beans in. Lightly simmer the vegetables on low heat for a few minutes until softened. Turn off the heat, and place green beans to the side.
Preheat the oven to 450 F. While the oven is heating, gather the remaining ingredients and a medium-sized cake or baking pan (it just needs to be deep enough to hold ingredients, about 3 inches should be enough).
On the bottom of the pan, empty the cans of the cream of chicken. Lightly season the cream of chicken with the all-purpose seasoning. In order, add 3 ounces of cheese, the green beans, the remaining cheese and the crispy onions. Bake for 5 minutes. Let the dish cool and then serve.
