This delicious and quick five-minute queso recipe is sure to get your taste buds tingling.
With a blend of five different cheeses, cream, medley of Mexican spices and vegetables, this queso is perfect for nachos, pasta or whatever you’re in the mood for.
FIVE CHEESE QUESO
Prep time: 5 minutes.
Serves 5 to 7 people.
INGREDIENTS
2 cups chihuahua cheese
2.5 cups Mexican four cheese blend
2 tablespoons butter
4 oz 2% milk
8 oz Crema Supremo – Mexican sour cream
1 teaspoon chili powder
1 pinch cumin
2 pinches salt
2 Roma tomatoes
4 oz diced green chilis
1 small white onion
4 oz cilantro
Optional: 2 medium jalapeños
DIRECTIONS
Prepare tomatoes, onions and cilantro by chopping them into small pieces. Put in a medium bowl with a can of green chilies. Mix vegetables with spatula then set to the side.
Optionally, take jalapeños and chop into small pieces, removing stems and seeds. For extra heat, you can leave the seeds in.
In a medium saucepan, melt butter on low heat. Slowly add the vegetables and simmer for 2 minutes. Sprinkle salt on vegetables while mixing.
When slightly browned, add all the cheese to the pan and let simmer for 2 minutes, gently stirring until the cheese is combined. Add milk and remaining spices.
Turn off heat and stir in sour cream until the mixture is fully combined. Let cool slightly and enjoy.
