Coffee and bagels coming to campus

DeKALB — Two restaurants will be making their way to campus.
The Holmes Student Center will be adding dining options as part of the previously announced $20 million renovations. The Holmes Student Center renovation is funded through Build America Bonds, which specifically focuses on construction projects. The renovation project intends to begin construction this summer and finish in the fall of 2019.
The opening dates of the new businesses have not yet been confirmed.
One known restaurant, Moe’s Southwest Grill franchise, a Mexican style restaurant, will operate a storefront in the lower level dining area of the student center.
The franchise was awarded the space Jan. 30. A public hearing for the procurement of the space was set for Jan. 24 but was cancelled when no vendors applied for the space.
Moe’s Southwest Grill has an estimated contract of $315,000 with the university between March 1 to Feb. 29, 2028, according to a Jan. 30 Public Higher Education Bulletin.
The Founders Memorial Library will also be gaining a Caribou Coffee and Einstein Bros. Bagels. The public hearing to approve the procurement of this space was cancelled on Jan. 2 because no other vendors applied.

Einstein Bros. Bagels serves a variety of bagels like the Everything bagel and French Toast bagel, as well as gourmet bagels like the Cheesy Hashbrown bagel and Cheddar Jalapeno bagel, according to the Einstein Bros. Bagels webpage.
Caribou Coffee offers classic and signature coffees, as well as tea, smoothies and Caribou Coolers, which are blended shakes with or without coffee, according to the Caribou Coffee webpage.
