Recipe of the week: Upgraded ramen
November 7, 2016
Ramen fills the cabinets of many college students at a low cost. Instead of switching up meals by changing between the chicken or beef cup of noodles, try this recipe to spice up the typical ramen meal.
This recipe for upgraded ramen serves four people or one person with leftovers. Any additional vegetables can be added but cooking times may change with added ingredients.
Warning: this recipe is a little spicy, to decrease the spiciness of this dish, reduce the amount of chili powder used in the sauce.
What you will need:
- 3 packages of ramen (flavor packets discarded)
- 1/3 c. teriyaki sauce
- 1/2 tsp. chili powder
- 1 tsp. honey
- Juice from one lime
- 2 cloves of garlic, minced
- 1 onion, chopped
- 1 large carrot, julienne
- 1 cup of broccoli florets
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1/4 cup sweet peas
- 1 tbsp. olive oil
1. Add ramen to a pot of boiling water. Let the noodles cook for three minutes then drain the water and set the noodles aside.
2. In a large skillet add the julienne carrots (small, thick slices), broccoli florets, sweet peas, peppers, olive oil and onion on low-medium heat. Stir occasionally cooking the vegetables evenly.
3. In a small bowl combine teriyaki sauce, chili powder, honey, lime juice and garlic. Whisk the ingredients together and set aside.
4. When the vegetables become tender, about six minutes, add cooked ramen to the skillet. Stir together ramen and vegetables until fully mixed.
5. Add the sauce mixture and stir until all the vegetables and noodles are coated.
Optional: If you would like to add meat to this recipe, cooked meat can be added after the noodles are added to the skillet.
