Every week I will be selecting one of my favorite pins on Pinterest to share, hand selected for the campus-wide audience.

With DeKalb’s Cornfest happening this weekend, corn is on my mind. My pin of the week is an avocado corn salsa recipe that festival attendees certainly can enjoy after they have picked up all of their corn from this weekend.

What I really love about this recipe is how quick it is to make – It takes 10 minutes and serves four people. I don’t have much time in college to whip up many meals and if I can fix up something fresh, fun and have leftovers – I’m going to want to reach for this recipe.

I also love how much minimal work it requires to make this dish. The recipe calls for eight ingredients total, about half are things I already have in my pantry and one of the ingredients is something I will pick up at Corn Fest this weekend – Corn, I’m talking about corn.
