Rolling Harvest began with want to provide healthy options

NIU’s unofficial food truck started with an alumnus’s desire to provide a healthy alternative for students.

Rolling Harvest Food Truck, the orange vehicle that has been parked in the Martin Luther King Jr. Commons every week day since the beginning of the semester, is owned and operated by alumnus Jim Casey. Casey graduated from NIU last semester with a degree in nutrition.

The idea for the Rolling Harvest Food Truck came when Casey was a teaching assistant for FCNS 320, Quality Food Production. It was suggested to him that NIU have a healthy, convenient option when it comes to dining services, he said.

The food truck sells sliders, hummus and veggies, salads, and chili, among other things. The truck may start offering daily specials next week, Casey said.

The Rolling Harvest Food Truck is open from 10 a.m. to 2 p.m. Monday through Friday in the Martin Luther King Jr. Commons. Go to rollingharvestfoodtruck.com for more information.
