How to cook steak

Nothing beats a great cut of steak — if you prepare it well.

These recipes will show you just how the restaurants create amazing meals with perfectly cooked steak so you can turn your ordinary foods into a culinary masterpiece.

Beef Bourguignon

What you will need:

  • Large sauté pan
  • Large roasting pan
  • 2 1/2 pounds boneless beef chuck
  • 3 tablespoons brandy
  • 1/2 pound small pearl onions
  • 1/2 pound small fresh mushrooms
  • 2 1/2 tablespoons instant potatoes
  • 2 tablespoons tomato paste
  • 1 1/2 cups burgundy
  • 3/4 cup dry sherry
  • 3/4 cup ruby port
  • 10 1/2 ounces of condensed beef bouillon
  • 1/8 teaspoon black pepper
  • 1 bay leaf
  • 4 tablespoons butter

What to do:

  1. Pour yourself a glass of wine because this will take a while.
  2. Preheat oven to 350 degrees.
  3. Cut the beef chuck into 1-inch chunks.
  4. Melt 2 tablespoons of butter in a sauté pan and brown the meat in it.
  5. Remove the meat from the pan and set it aside for later.
  6. Add the remaining butter, mushrooms and onions to the sauté pan.
  7. Once cooked, remove the mushrooms and onions from the pan.
  8. Add remaining ingredients (not including meat, mushrooms and onions) to the sauté pan and bring to a boil.
  9. Place the meat, mushrooms and onions in a roasting pan.
  10. Pour the hot contents of the sauté pan into the roasting pan with the meat, mushrooms and onions.
  11. Cover and place the roasting pan in the oven and bake for at least 90 minutes.
  12. Stir occasionally, and serve immediately.

Cabbage and Beef Soup

What you will need:

  • Large pot
  • Strainer
  • Empty can for grease
  • 1 pound ground beef
  • 1 yellow onion, chopped
  • 2 stalks celery, chopped
  • 2 cloves garlic, chopped
  • 32 ounces beef broth
  • 1/2 head cabbage, sliced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon vinegar
  • 1/4 cup sugar
  • 2 carrots, sliced
  • 8 ounces tomato sauce

What to do:

  1. Brown the meat and drain the grease into an empty can.
  2. Cook the meat, onions, celery and garlic in a large pot on medium high heat for five minutes.
  3. Add the remaining ingredients to the pot.
  4. Simmer covered for at least one hour, stirring after 30 minutes of simmering.
  5. Serve with French bread.

Steak Rolls

What you will need:

  • Mixing bowl
  • Roasting pan
  • Toothpicks
  • Twine
  • Aluminum foil
  • 1 1/2 pounds round steak (1/2 inch thick)
  • 3/4 pounds mushrooms, finely chopped
  • 3/4 pounds onions, finely chopped
  • 1 stick butter, melted
  • 7 ounces herb stuffing (very fine, not cubed)
  • 20 ounces beef broth

What to do:

  1. Preheat oven to 325 degrees.
  2. Mix the butter, mushrooms, onions and stuffing in a bowl.
  3. Layer the stuffing mixture onto the round steak.
  4. Roll the steak tightly and secure it closed with the toothpicks and twine. It is best to secure the center portion of the roll with the twine and the ends with the toothpicks.
  5. Place the roll into the roasting pan.
  6. Pour the broth into the pan and cover with aluminum foil.
  7. Place the pan in the oven for at least one hour or until very tender.
  8. Slice into 1-inch portions before serving.
