Pizzerias loyal to DeKalb

From the way the dough is tossed to the position it is placed in the oven, pizza is an artform. So said Robert Schlecht, manager of Pizza Pros.
Saturday marks the 13th year Pizza Pros, 928 W. Lincoln Highway, has been serving pizza in DeKalb.
But two other restaurants have spent many more days tossing dough for the community. Pagliai’s Pizza and Pasta and Pizza Villa have been a part of the DeKalb pizza scene since the early 1960s. Pagliai’s recently moved from a space at 1221 W. Lincoln Highway to a smaller location at 817 W. Lincoln Highway.
Although the restaurant has been in existence since 1963, Jim Kardaras has owned Pagliai’s since 1986.
Since moving to its new location, deliveries have increased 10 percent, Kardaras said. Much of the restaurant’s business is late-night deliveries to the residence halls and the Greek Row community.
“The new location is more convenient for residents of the halls because of its central location on campus,” said senior communication major Tiffany Gonzales.
“Because of a change in business over the last decade, we are doing a lot more deliveries rather than in-house dining,” owner Jim Kardaras said.
