Recipe: Irish potato bites

These Irish Potato Bites are a simple and delicious St. Patrick’s Day recipe filled with corned beef and cheddar cheese in the style of a potato skins. 

IRISH POTATO BITES 

Servings: 8

Ingredients:

20 small red potatoes 

½ cup of shredded cheddar cheese 

½ cup of corned beef 

1 tablespoon of melted butter 

⅛ teaspoon salt 

Sour cream 

Steps 

Fill a large pot with water and bring to a boil.

Add potatoes until tender, check using a fork.

Heat oven to 400 degrees.

Allow the potatoes to cool, then cut each potato in half. Then, cut off a small piece of the rounded end so the potato can sit up. 

Scoop the inside out of each potato and place it into a separate bowl. 

Add the cheese, corned beef, and butter to the bowl with the scooped out insides. 

Add salt and sprinkle over potato skins. 

Place the mixture back inside the potato skin halves and place onto a baking sheet. 

Set the baking sheet in the oven and bake for 10 minutes. 

Top it off with a dollop of sour cream.
