Cooking With Flavor: budget-friendly spanokopita

College Student’s Spanokopita:

This recipe is a cheap, easy take on the Greek dish spanokopita that only uses a handful of ingredients.

Serves 4

1 tube of crescent rolls

1 package frozen spinach

¾ cup goat cheese

salt, pepper, tomato powder (optional) for seasoning

paper towel

Preheat oven to 400 degrees Fahrenheit. Take spinach out of package and defrost on a plate for five minutes. Spray baking sheet with non-stick cooking spray. Crumble goat cheese. Separate crescent rolls into squares by leaving dough connected in sets of two triangular pieces. When spinach finishes defrosting, wrap in paper towel to squeeze out excess moisture. Spinach must dry before the next step. Divide spinach and goat cheese equally onto each crescent roll square. Wrap the dough around spinach and goat cheese to create long pockets. Place on baking sheet, and bake for 10 to 15 minutes, or until golden brown.
