Learn to mix flavors, pair your salad right

By Jay Ibarra

If you’re going to a summer barbecue at the last minute and you need a side salad to take, this recipe is an easy one to whip up in just a few minutes before the party.

This lightweight summer salad is a fresh one that will pair well with either a glass of iced tea or a cold glass of sangria — the options are limitless. The great thing about this salad is that you can you can garnish it several different ways. You can put different fruits on top of it and use different dressings to change the taste. For this recipe, I used a raspberry vinaigrette dressing and strawberries for my fruit to give it a flavorful texture. Using strawberries and raspberries together actually complement quite well, especially mixed with cranberries and almonds — all of the mixings bring out sweet and savory flavors.

I would pair this specific salad with a nice glass of iced tea and bring it to an afternoon time picnic because it has so much sweet flavors that the ice tea will balance well with it’s fruit filled taste. Also, because it has strawberries, that tend to go squish fast — it’s best served at lunch time.

What to do:

1. Take your bag of spinach leaves and place them in the colander to wash them.

2. Once your spinach leaves are washed, place them in a large portable round serving bowl.

3. Wash your strawberries in the colander and slice them in 1/8 pieces, then mix in the bowl of spinach leaves.

4. Pour 1 tablespoon of half cut almonds over the bowl of spinach leaves and blend into the mixture.

5. Pour 1 cup of crasins over the bowl of spinach leaves and blend into the mixture.

6. Sprinkle a small handful of feta cheese over the mixture.
