Yummy alternatives make dieting easier

You’re two weeks into that New Year’s resolution diet and want a satisfying snack.

Three healthy and easy to make treats are mini-rice cake stacks, peanut energy bars and strawberry and cream cheese sandwiches.

Mini-rice cake stacks

Mini-rice cake stacks are by far the easiest of the recipes to make.

Buy a bag of the mini-rice cakes, peanut butter and bananas. My favorite flavor of rice cake for this recipe is apple cinnamon. Take the mini-rice cakes and spread peanut butter on each piece.

Slice the bananas and put slices on half of the rice cakes. Place the rest of the rice cakes on top of the banana-covered rice cakes. Bag them up and they are all set to go for an easy eat on the way to class.

Strawberry and cream cheese sandwiches

Strawberry and cream cheese sandwiches may sound disgusting, but there are more ingredients added to this than the title implies.

For this recipe, you need 1 tablespoon of reduced fat cream cheese, 1/4 teaspoon honey, two slices of whole wheat bread and two medium-sized sliced strawberries. The recipe also calls for freshly grated orange zest if desired.

Combine the cream cheese and honey in a bowl, and thoroughly mix it together. Once finished, spread the mixture onto the slices of wheat bread. Place the sliced strawberries onto one of the bread slices and top it with the other slice.

Peanut energy bars

Peanut energy bars definitely take a little more time, energy and even a microwave to make.

These bars contain 1/2 cup dry roasted peanuts, 1/2 cup dry roasted sunflower seeds, 2 cups of raisins, 2 cups of instant oats, 2 cups of Rice Krispies, 1/2 cup peanut butter, 1/2 cup packed brown sugar, 1/2 cup honey and 1 teaspoon of vanilla.

Coat a baking pan with cooking spray. Combine the peanuts, sunflower seeds, oats and Rice Krispies in a large bowl.

Add the peanut butter, brown sugar and honey into a smaller bowl. Microwave that bowl on high until the food bubbles. This process should take one to two minutes.

Add the vanilla to the small bowl, and stir until it is all blended. Pour the mixture over the dry ingredients and mix until they are coated in vanilla. Transfer the mixture into a flat layer in the coated pan, and push down until it is even across the pan.

A little trick to keep the bars from sticking to your fingers is to coat your fingers with cooking spray.

Let the snack dry for about an hour, and then cut into bars.
