DugOut open for business

After construction projects in the residence halls delayed the Jan. 12 opening of the DuSable DugOut, it now is open. However, it is too early to determine its success, said Karen Villano, food service director for the Holmes Student Center.

“The guys that were working on [the DugOut] had an emergency in the residence halls,” Villano said.

Once the residence hall project was completed, the DuSable construction crew finished installing cabinets, refrigeration, basic electrical work and a sink with running water, Villano said.

Food items available include nachos, salads, hot dogs, sandwiches, Dole juice, Frappuccinos and muffins. On Monday, workers at the DuSable DugOut gave away free samples of tortilla wraps.

“We gave away a turkey one and a veggie one. Students liked the chipotle sauce more,” Villano said.

They also are working to develop a unique brand of coffee to be sold at the DugOut.

“We’re working with a company to develop a signature coffee. We hope to have it within the next couple of weeks,” said Bill Berg, food service administrator for the student center.

Although Villano said it is too early to determine the DugOut’s success, Berg said the DugOut is busy between classes.

All revenue generated from sales is put back into food costs, labor costs and other expenses.

“We also pay 13 to 16 percent of all the income to maintenance and utilities like the phone,” Villano said.
