Strawberry recipe for residence halls

Living in a residence hall with only a microwave to cook with does not mean having to go without delicious desserts. Here is a no-bake recipe for a Strawberry Nutella Icebox Cake students can prepare in 15 minutes.

Ingredients:

½ teaspoon ground cinnamon

2 teaspoons vanilla extract

3 cups heavy whipping cream

½ cup Nutella

2 ½ cups thinly sliced strawberries

15 sheets graham crackers

Directions:

1. Add cinnamon, vanilla, cream and sugar to a large bowl and mix with an electric mixer for three to four minutes or until mix appears fluffy.

2. Move mixture to a clean bowl and fold the Nutella into the cream. Mix gently so cream does not deflate.

3. Using an 8 by 8 inch pan lined with aluminum foil, arrange the graham crackers so they fit just right, covering the surface completely.

4. Cover the graham crackers with a heaping layer of whipped cream. Spread the whipped cream evenly over the surface of the crackers.

5. Thinly slice the strawberries and place 1 cup of them on top of the cream, laying them out evenly.

6. Repeat this layering process two more times, adding another layer of graham crackers, cream, then strawberries. The cake will have three layers of graham crackers, three layers of cream and two layers of strawberries throughout.

7. Cover and refrigerate the pan for a minimum of 6 hours.

Once ready, remove the pan from the fridge, garnish with leftover sliced strawberries and cut into one inch slices. Cut into the cake to serve it up to roommates and friends as they devour the no-bake snack. This simple, delicious recipe will cure students’ sweet tooth, as well as remind them that home cooked meals are possible, even in residence halls.
